Executive Chef, Roberto Mendoza
Roberto Mendoza has been working in restaurants since he was 13 years old. At the age of 15 he took a job as a dishwasher, at Michelin Star Restaurant, Dio Deka. He mentored under that Chef as a line cook then a sous chef where he developed his passion for cooking.
Later in his career he worked at several restaurants in San Francisco with other chefs who have Michelin Star experience.
Roberto likes to surprise people with his dishes. He enjoys creating menu’s that are reflective of seasonal flavors and offerings. He believes the best dishes are made with ingredients that are locally sourced and representative of what’s fresh and in season.
Roberto started at Cin Cin as a line cook and we quickly realized how amazing his cooking style and kitchen management skills are. We are happy to promote him to our Executive Sous Chef and are excited about the changes he is making to our menu.
Roberto explains that he really enjoys working at Cin Cin because he is part of our family, and he is given the freedom to create and experiment on new dishes and also helps to influence our business operations.
